Five spice and Tamarind Jam Chook using Roni B Tamarind Jam
Do you ever get one of those days where you are craving something? My craving was roast chicken and I threw together this delicious roasted Chook with some delicious ingredients. You ever had those Chinese chicken thighs over the rotisserie counter? this was the type of feeling and flavour I wanted when I ate into the chicken. I used Roni B’s Tamarind Jam (buy it here) for the glaze and it created the most sticky and scrumptious skin! Get yourself a jar and then you are nearly all set to make this fantastic chicken that can be enjoyed maybe for your next Sunday dinner or whenever you’re craving a roast chicken like I was!
WHAT YOU WILL NEED:
Whole Chicken
1/2 jar of Roni B Tamarind Jam
1 tsp of Garlic Powder
2 tbsp of Sesame Oil or Veg Oil
2 tbsp of Five Spice powder
2 tbsp of Soy Sauce
METHOD:
Pre heat your oven to 180.
In a bowl mix the five spice, garlic, tamarind jam, oil and soy till it’s well incorporated.
Using a pastry brush- brush the mixture onto the chicken until it’s fully glazed.If you have any mix left leave it to the side.
Cook your chicken in a roasting tin with a little bit of water in the bottom to steam and also roast your chicken. A large bird typically takes jut over an hour so if you have any mixture left- half way through cooking take the chook out and reglaze with the rest of the mixture.
The skin should caramelise and be crispy for you to enjoy . Make sure you let the Chicken rest before carving and enjoy with whatever you want to eat it with! Enjoy! x
