Mapsilog- Mushroom Silog

You ever had a Filipino breakfast? They are mega. My favourite being Tapsilog- Beef Tapa ( sliced marinated beef) served with sinangang (fried rice) or rice and of course- a fried egg! There are many types of “silog” depending on the type of protein that accompanies the rice and egg. This can range from Longsilog (Filipino cured sausage served with rice and egg) or CornSilog (Corned beef) or Bangsilog (Fried Bangus fillet with the same accompaniments).

This is my Veggie rendition to Tapsilog thats why it’s called Mapsilog..get it? Mushroom- Mapa/ Mapsilog? haha. Anyways.. this is how you make it and how you can enjoy one of my favourite Filipino dishes meat free and veggie friendly! Omit the egg and it’s completely vegan.

WHAT YOU WILL NEED:

1 Egg

A pack of Oyster mushrooms

3 tbsp of Cornflour

2x Minced garlic

1 tsp of White pepper

1 Tbsp of Soy

2 Tsp of Brown Sugar

1 Tbsp of White Vinegar

Cooked rice to accompany your meal

METHOD:

  1. Marinate the Oyster mushrooms in the soy, white pepper, sugar and vinegar for about 30 minutes.

  2. Cook your rice ready so it’s hot and ready for plating. If you have leftover rice- then make Sinangang! Simple mince one clove of garlic and fry with a little bit of oil in a non stock pan and season with salt.

  3. After your mushrooms have been marinated for half an hour, get a pan ready with a little bit of vegetable oil in. Once the oil is hot throw the cornflour on top of the mushrooms and give it a light mix. The cornflour will make the mushrooms get a nice crispy texture when you fry them.

  4. In your pan fry your mushrooms till they get a gorgeous caramelized colour. These don’t take long at all. Get a kitchen towel and just put the mushrooms on to dab off the excess oil.

  5. In a pan fry your egg how you like ( I like a cispy skirt and a soft yolk) and then assemble your Mapsilog.

I added some crispy shallot and cispy garlic too ontop for a bit of texture but it’s not necessary! I also had some wilted spinach on the side so feel free to enjoy this dish how you want especially if you want some extra veggies. Enjoy!
