Mama Z's Nuggs Nuggs
You all know I love a Nugg Nugg. I even have a tattoo that says that. Surprisingly until now, I had never made them ( I know right) but these nuggets were a little special and used my very own Banana Ketchup. This recipe will easily feed 3 of you some tasty nuggs.
I ate my Nuggs the very Filipino and Asian way with some rice and some veg. You can of course adapt this recipe to create your own fakeaway/ chicken nugget meal and choose your own sides.
What you will need:
4-5 Boneless Chicken Thighs
3 tbsp Mama Z Banana ketchup
1 good thumb sized piece of ginger minced
1 x clove of Garlic minced
1 tbsp Soy Sauce
1 x Lemon
Marinade your Chicken thigh in the above. For best results allow your chicken to marinade for at least 3-4 hours or over night like I did. Squeeze the Lemon juice into the container/bag you are marinated the Chicken in and keep the skins in there too.
Dry Rub:
2 Cups of Plain Flour ( Use a mug)
2 Cups of Corn Flour
2 tbsp Garlic Powder
1 tbsp 5 Spice
1 tbsp Chicken Stock powder ( or use salt)
1 tsp of White Pepper/ ground pepper
Put all the dry ingredients and mix well with a fork in a container.
1. Once your Chicken has marinated- cut your Chicken into “nugg” pieces and stick in the dry mix batter.
2. Get a wok/pan with quite a bit of oil to fry the nuggs heating up on a hob.
3. Take the pieces of the Chicken out the dry batter mix and stick on a plate or separate container.
4. Into your dry mix- make the Wet Batter by adding:
-Add to your dry mix .
1 x Egg
60 ml Cold water
5. Mix your batter and make a thick wet batter. Add more cold water if you feel this is too thick.
6. Dip your pieces of chicken into the wet batter and fry in small lots as to not over crowd the pan. Drain your pieces so that the excess oil comes off before eating.
