Crispy Furikake chips
The other night was made Mob Kitchen’s Katsu chicken burger (which was unreal btw) and we had a bag of spuds that needed using up. These chips are super simple but are so tasty. I even had one of these cold the next day and they were still so crispy.
These are basically super fluffy roasties but in chip form and the Furikake seasoning gives it a great crunch on the chips. Furikake is a Japanese seasoning typically made with toasted sesame seeds, nori, salt, sugar. and msg. I made one with kale instead of nori which Celestial Peach got me onto during lock down.
You can buy Furikake in most Asian supermarkets and can vary in their ingredients as it depends on the region of where it is made. I bought this really tasty one with dried plums in which gives a great sour taste. You can put Furikake on absolutely anything so it’s extremely versatile so get yourself some anyways not just for these chips.

Ingredients:
4-5 Maris piper potatoes sliced into wedges
deep pan of water for boiling
1 tbsp Salt
3 tbsp cornflour
2 tbsp Garlic granules
3 tbsp Furikake
Salt and pepper to taste
Vegetable oil (5-6 tbsp)
Method:
Pre heat your oven to 180 ahead of time.
1. Boil your potato wedges in the water with the tbsp of salt till al dente. Once they are cooked but still firm, drain with a colander and put them in a mixing bowl.
2. Add the cornflour scattering over the potatoes and give the potatoes a good mix by tossing them in the bowl. This should break the skin of the potato and fluff them up.
3. In a roasting tray, add a good dollop of vegetable oil (approx 5 tbsp) and put in the preheated oven to heat up. This is basically what you do with roasted potatoes.
4. Once the oil has got very hot, carefully take the roasting tray out and add your potato wedges into the hot oil. Using a spoon, just give potatoes a bit of a toss in the oil and season with some salt and pepper. Put the potato chips/wedges into the oven and roast for 20 minutes.
5. Your potatoes should be getting crispy and delicious by now. Give everything a mix and pop back in the oven for a further 10-15 minutes to crisp up the rest of the sides of the potatoes.
6. Take the potatoes out of the tray and into a bowl where you will toss and season with the Furikake seasoning and garlic granules. Add salt and pepper if needed but the Furikake already has salt in and the potatoes were also roasted at the start. However, I understand everyone likes their food differently to just season to taste.
I know it’s rather simple but they are so delicious, especially with a burger or whatever you fancy. Make a delicious sauce to go alongside and they are the perfect side or snack if you fancy some knock out chips. Hope this makes some potato lovers happy.
