Easy zesty non mayo vegan slaw
I know this might seem quite basic but sometimes there really is nothing better than a good slaw. I had slaw PTSD after making so much of it in the kitchen using so much mayo that it really put me off slaw. This slaw however is so easy to make and is not only vegan but is so fresh and just looks so gorgeous! It isn’t swimming in mayo and makes a great side salad for any meal.
The last time I made this was for Cracking good food and I also love eating this when I make Caribbean dishes as it goes so well with those flavours. Cracking with a BBQ and also a recipe that everyone can eat!
I used a mandolin for this but if you haven’t got one, don’t fret! I do just advise taking the time to slice everything as thinly and evenly as possible as it honestly does make the difference.

Let’s get to it.
This recipe makes about 2L of slaw.
Ingredients:
1x Green apple thinly sliced and julienned or cut into matchsticks
1/2 White cabbage thinly sliced/grated
1/4 Small red Cabbage thinly slice/grated
1/2 Pot (200g) of Vegan plain yogurt
4 tbsp Vinegar (use Cider/White just not malt or balsamic vinegar)
1 Bunch of mint
2 x Carrots sliced thinly/julienne or grated
2x Sprigs of spring onion thinly sliced
1 Bunch coriander
2 Limes zested and juiced
Salt and Pepper to taste
Method:
1. In a bowl combine your thinly sliced vegetable (cabbage, carrot and apple) and mix well together.
2. Add your lime zest and juice, vinegar and give it a mix.
3. Chop up half your mint and coriander and put into the bowl. Add your yogurt and mix well.
4. Make sure all the cabbage etc is coated well in the bowl and season with salt and pepper. Taste to see and add more lime if you feel you need it, salt/ pepper etc.
Serve alongside your favourite meal or spread. Garnish with the leftover mint and coriander by picking them and scattering on top for not only presentation but for texture. I guarantee you’ll be making this easy slaw again! Enjoy x
