Hipon toast aka Filipino prawn toast with Hot Zos

Those of you who like prawn toast will definitely love this prawn toast. Hipon is the word for prawn in Tagalog and this prawn toast is not only juicy, naughty and sooo tasty, but it has the Filipino flavours of Longganisa. Longganisa is a sweet cured sausage but Longganisa translates to “bacon.” Think chorizo vibes with the use of paprika and garlic in this recipe, a nod to our Spanish colonial routes and flavours in Filipino food.

I dipped this in my Hot Zos hot sauce which not only has a bit of a kick but really accentuates the crispy prawn toast and all the flavours in each bite.

This recipe makes 2 prawn toast slices (8 pieces sliced up). Feel free to dip your prawn toast in any sauce you want but you can grab my Hot Zos on my website or in local MCR stockists.

Ingredients:

2x Slices white bread ( I used thick white Warbys)

300g Fresh Prawns

1/2 x Stick of celery finely chopped/ blitzed

Thumb size piece of ginger minced

4 x Garlic cloves minced

1x tsp Sesame oil

1 tsp Salt

2 tsp Sugar

2 tsp Smoked Paprika

Handful sesame seeds

Enough oil for shallow frying approx 250ml

2x Sprigs of spring onion chopped finely

1 tbsp Cornflour

Method:

1. In a food processor pop your garlic, celery, ginger, sugar , smoked paprika and salt in and pulse. Add 150 g of your prawns and pulse till well combined but not too minced.

2. Chop the remaining prawns chunky and evenly. Mix this in with the rest of the prawn mixture in the bowl.

3. Add the sesame oil, pepper, spring onion and corn flour to the bowl. Give it all a good mix and everything should be coated in all the aromatics and flavours.

4. Get your pan hot pn a medium heat with your oil ready for frying. Get your sesame seeds on a small plate.

5. Get your bread and using the back of the spoon evenly spread the prawn mix over the bread. After you have done both pieces of bread with the prawn mix, dip your bread face down on to the small plate with the sesame seeds on.

6. Fry your prawn toast face down for a couple of minutes before flipping over and crisping up the other side.

7. Dab your prawn toast on some kitchen paper to dab any excess oil off and slice into 8 pieces to enjoy!
